Amish Egg Noodle Recipe

As requested, here is my egg noodle recipe. One time when the children were younger, we made several batches and had noodles drying all over the kitchen. We even cleaned the ceiling fan, drapped it with clean linen tea towels and hung the noodles off the fan blades. There were noodles hung over the backs of chairs and over cabinet doors etc. All of course scrubbed clean and drapped with a clean dry cloth. But it sure looked funny. We all laughed about what would happen if someone mistakenly turned on the ceiling fan. Flying Noodles !

Amish Egg Noodles Recipe
Ingredients:
3 eggs
2 cups all-purpose flour (approximately)
1/2 teaspoon saltDirections:
Beat eggs until frothy.
Add flour and stir until of dough texture.
Knead until smooth.
Turn into floured cutting board.
Roll dough turning often until thin.
Let noodle dough dry 45 minutes, then turn and dry another 1/2 hour.
Cut into noodles.

We make them exactly the same way! Sometimes when I am a bit too lazy to cut those fine thin noodles for the soup, I just let the piece of pasta dry a bit and then I grate it on a grater until I get heap of kind of crumbs which I just throw into boiling consomme and it is as nice as if there would be those thin noodles floating...
